
this recipe is from my meal plan subscription by Nourished Kitchen one of my favorite real food blogs. it was VERY easy & quick to make, very filling, the kids even liked it and goes great with a green leafy salad and fresh seasonal fruit (peaches and berries anyone?).

greek-style meatzza

5 minutes (active), 15 minutes (oven), 5 minutes (broiler)
ingredients
for the meatzza
• 1 1/2 lbs ground beef • 1/4 lb ground organ meat such as liver, heart
or kidney • 2 eggs, beaten • 2 tbsps minced fresh oregano • 2 tbsps minced fresh onion • 2 cloves garlic, finely minced • 1 1/2 tsps unrefined sea salt • 1/2 tsp ground black pepper
for the toppings
• 1/4 cup tomato sauce • 1/2 cup pitted kalamata olives • 4 cloves garlic, coarsely chopped • 1 small red onion, peeled and sliced into rounds no thicker than 1/8-inch • 1/2 cup crumbled feta cheese

Line a baking sheet with parchment paper and preheat the oven to 425 degrees Fahrenheit. In a large mixing bowl, combine ground beef. ground organ meat and two beaten eggs with oregano, onion, garlic, unrefined sea salt and ground black pepper. Knead until thoroughly combined then transfer to the parchment-lined baking sheet. To form the meatzza base, press the seasoned ground meat evenly along the baking sheet, about 1/4 to 1/2-inch thick. Bake the meatzza in an oven preheated to 425 degrees Fahrenheit for about fifteen minutes. The meatzza base will have contracted during cooking. Remove the meatzza base from the oven and drain off any fat.
Spread tomato sauce over meatzza, top with olives, garlic, onion and crumbled feta cheese. Return the meatzza to the oven, turn the broiler onto high, and broil until toppings are browned - about five minutes.
wish i had a picture because it's pretty lovely too, with the bright red sauce... i actually used organic tomato paste with herbs mixed in, come to think of it. feta was on sale 10 for 10 at Deirberg's last week and i already had most of the other ingredients so it was perfect. I bought unpitted olives because there was a $5 difference in price and they worked just fine- i just treated them like a pitted fruit and cut/pulled it out. Don't feel like you have to use the organ meats either- but they are SO good for you and you can't taste a difference in this dish.
for our smoothies i just tossed some frozen raspberries, 2 ripe peaches, a bit of raw honey, one pastured egg, 1 1/2 cup of whole plain yogurt, 1/2 teaspoon of vanilla and some ice into the blender.

it was incredibly refreshing and filling! Hope you get a chance to try one or both of these.
