coconut carrot grain free muffins
Hey guys!
Thank you for the congrats! I'm still trying to wrap my mind around the fact that there is another little heart and soul beating and growing, being fearfully formed in my womb. cray cray.
today i want to share a favorite grain free treat in our home. (i can't remember if i've shared it here before.... baby brain!) It even has veggies which we are always trying to get in:)
We call them coconut carrot muffins and that way we don't feel bad for eating them at breakfast, lunch & dinner.
They are fluffy and delicious and full of yummy pastured eggs so they fit the bill for a nourishing pregnant snack.
They never last more than a day and a half in our house because Emmy will climb, scale and leap across any bounds or barriers to get to them:) They are perfect with a mug of raw goat's milk.
with out further ado:
Ingredients:
6 eggs
1/2 c coconut oil, melted
1/2 c raw honey
2 TB high quality vanilla
1/2 tsp sea salt
1/2 tsp baking soda
2 tsp cinnamon
1/2 c coconut flour
2 c organic carrots, shredded
1/2 c organic raisins or dried cranberries, optional
Preheat the oven to 350 degrees. Line 12 muffin cups with liners, or grease with coconut oil. Combine the eggs, coconut oil, honey and vanilla in a large bowl or in the bowl of an electric mixer. Add in the salt, baking soda and cinnamon. Sprinkle the coconut flour over the mixture and then whisk into the batter. Mix well so that there aren’t any clumps. Fold in the shredded carrots and raisins or cranberries. Use an ice cream scoop to divide the batter evenly among the prepared muffin cups. Bake for 20 minutes, or until a toothpick comes out clean. YUM!
we don't usually have raisins or cranberries on hand to include but they are still amazing, and as *truly raw honey can be quite expensive (though worth it!) we generally use closer to 1/4 c.
this recipe isn't original to me, i found it somewhere on the interwebs and place no claim on it- although it will definitely be going into a family cookbook that is to be passed from generation to generation- relearning the art of nourishing real foods that can bring our family real health from the inside out! Really excited for a family heritage of figuring out how God designed our bodies to function and thrive with food!

oh hey, i'm pregnant!

If you couldn't quite tell, it was a surprise!
A good surprise but a shocking surprise as well.
We are due March 15th which just happens to be our oldest son Leland's birthday. Crazy!

Ainsworth!
well... about 60 of you didn't have an opinion on the glasses poll, but that's ok!
(EDIT: Maria thank you for the feedback! i miss you, i love you- and i wish there was a little travel-Star Trek-beam-me-to-Mt.Vernon- possibility:) thanks also for the text & call from Danielle & Nicole:O)
i really thought that i would have a hard time choosing but after wearing each of them for a full day it was an easy decision on which fit me (physically & personality) the best. the Ainsworth!

i really thought that i would have a hard time choosing but after wearing each of them for a full day it was an easy decision on which fit me (physically & personality) the best. the Ainsworth!
It's okay that you didn't vote but it's so funny that even though it's not about you, i felt really awkward posting *5* pictures of my face in one post. i thought, "Gosh, this seems maybe, a little conceited. But...there are 5 pairs! And it's fun to do a poll! Surely no one will think poorly of me over it."
But i still felt unsure. And then no one voted! and i thought it again- people thought it was weird, or silly.
But i'm moving past thinking about what people are thinking about me. Because *that* is what's really conceited. What is prideful. Being so worried about how people see me that i only do things that are really comfortable, so that *I* don't have to feel vulnerable.
People have better things to do.
So, thank you, dear readers- for letting me make my decision:O) It was a really fun experience!

Right now i am trying to plan for 2 birthday parties and 13 Arbonne events in the month of JUNE! AH! yikeseroni.
I have a pin board for Oliver's Little Gentleman's 1st Birthday party & for Emory's Hello Kitty Hurrah but haven't been able to devote much time to actually making things happen.
i bought straws. that's it. this could get ugly:O)
hopefully i will be in a place of preparation to share some fun party DIY's in the next weeks.

This verse is going to be a help for me in this season of life. Especially with Arbonne, I am moving far out of my comfort zone and depending on God to see me through it. Self discipline is an area i have been lacking in for a while...well, maybe for forever! I am so thankful that God equips us and grows us in new/hard experiences.

slacker to the max
So, my darling friend Annie so kindly pointed out to me that I'm slacking on this here old blog. I have internet but haven't been even attempting to keep up!
grant me a tiny bit of grace and i promise i will TRY to do better:)
I attended the Classical Conversation practicum this week and i am SO excited to start tutoring this year! What an encouragement and affirmation that classical education is for us. Over the 3 day practicum the childcare was provide mostly by older teens that are a part of the CC family. They were AMAZING! So now my children are obsessed with "teenagers". They point them out like an exotic animal on safari. LOOK! A TEENAGER MOM! yes, yes, i see them. i also really appreciated that even in the play group that Leland & Emory were in they did so many learning things. We came back from the last day and Leland was telling Joel about how Pluto is now considered a "dorf" (dwarf) planet. It's covered with crust and ice- but not crust that you eat, of course.
Big event number 2 for the week was my first Arbonne spa as a *consultant! Granted my lovely friend Devan did everything of importance. My sister Jillie did a great job hosting and all the gals who came were so encouraging and interested. I am so excited to explore all the ins & outs of the products and company. I am already growing so much personally & spiritually through this opportunity and i am very grateful. :O) more on that soon.
A little fun from the week was that my Warby Parker 5 pair/5 day Home trial package came! what a fun company and a great idea. I picked out the 5 pairs of frames that i liked best and they sent them to me to try out. today is the last day and i think i have a favorite.... i'll let you help me decide- let me know 1-5 which is your favorite!

this is it- don't get scared now!
hello friends!
i'm back. we had to give in and get internet at the house so i will hopefully be able to keep up with everyone again:) I just spent way too much time trying to go back and read old post on your blogs and i think i will have to resign myself to just keeping up going forward.
looking at my picture/header made me laugh because the kids are now HUGE comparatively!
we are getting ready for new family pictures with Jessica Priest since it's birthday time and i can't wait to update.
i had a wonderful Mother's day with these sweeties
who gave me this wonderfulness
there are some exciting changes happening around here, per the usual and i'm praying, trusting and praying some more that we will handle them graciously and thrive in them!
One change is tutoring with Classical Conversations this year! I am very excited to be attending a practicum next week. Even better I get to start this adventure with my favorite teacher- my Momma:)
Soon I will let you in on some more excitement & craziness..... until then, read this: MONEYBOMB

I miss you. I really DO!
It's frustrating to rush to pay bills, check recipes and check in with folks quickly as I can while Joel is home with is phone/interwebs.
But if that is the worst part of my life I have it made in the shade.

I know Melissa & Ashley are both cooking up a little person!
SO EXCITING!
I appreciate Annie & Cayce often checking to make sure i'm still alive and kicking.
And some sweet snail mail from Katy made my day last month.
so here's a quick and random update.
Oliver:
Hysterical, adorable, cuddly, chubby goodness.
already 9 months, just started the army crawl and can't be kept in one place.
oh this boy. he's got my heart held fast in his pudgy, avocado covered hand.
Emory:
Precocious, tender, busy, daredevil, beauty of a girl.
incredibly close to 3 years old, such a mess and such a joy-smart as a whip and often i want to take one to her.
Nothing better than her larger than life hugs and bright glass eyes.
Leland:
turns.5.less.than.2.weeks.
how?
helper, watcher, ninja, feeling, all boy bolt of engery.
my first baby love. creating thoughtful works of art for each family member.
for me he drew: myself, wearing a green dress, by a little house with a green door, in the country, with a bright sun.
the kid knows my heart.
Joel:
gave me a night for zumba and friend conversation.
talks me into spontaneity. working his hands and heart tired for Atrium and for us.
learning in new roles, excited for true discipling.
love.

happy. tired. hungry. reading. praying.
enjoyed previously mentioned zumba with Neely & Annie- though felt i needed to apologize to those behind me for their view of my terrible, horrible, very bad, no good, booty shake.
reading and rereading One Thousand Gifts. this section cuts me raw:
"The world I live in is loud and blurring and the toilet plugs and I get speeding tickets and the dog gets sick all over the back step and I forget everything and these six kids lean hard and there are real souls that are at stake and how long do I really have to figure out how to live full of grace, full of joy-before these six beautiful children fly the coop and my mothering days fold up quiet?"
excited about Classical Conversations with Leland and diving further into real and traditions foods via Nourished Kitchen and the traditional food internet community- encouraged by friends reading for themselves and taking health and nourishment into their own hands.
and as i said, i miss you. so tell me:
